What is a Souvlaki?
It is usually meat of some sort, beef, lamb, pork or 'unknown combination' that is on a giant vertical rotisserie. The souvlaki 'cook' slices off the meat as it becomes done and puts it on a round pita bread with lettuce, tomato, onions, and sadziki, a cucumber-yogurt-garlic sauce that is what makes souvlakis great.
Greek Feta Cheese
Everyone is familiar with feta cheese which is made from sheep, goat or cow and is the national cheese of Greece if there is such a thing. Recently the EU made it a law that only the Greeks could call their cheese Feta. Feta cheese is actually from the area of Roumeli and is soaked in brine to keep it from going bad. It is not an aged cheese and in fact if you leave it too long it tastes too salty.

Contemporary Greek cookery is typical of Mediterranean cuisine, making wide use of olive oil, grains and bread, wine, fish, and various meats, including poultry and rabbit. Greece has an ancient culinary tradition dating back several millennia, and over the centuries Greek cuisine has evolved and absorbed numerous influences and influenced many cuisines.
Legend has it that Klephtico (or
Kleftiko) slow cooked lamb (or other meat) can be translated as 'stolen meat'. The Klephts, not having flocks of their own, would steal lambs or goats and cook the meat in a sealed pit to avoid the smoke being seen.
Some dishes can be traced back to ancient Greece: trahanas, skordalia, lentil soup, retsina, pasteli; some to the Hellenistic and Roman periods: loukaniko; and Byzantium: feta cheese, avgotaraho, paximadi. There are also many ancient and Byzantine preparations which are no longer consumed: porridge as the main staple, fish sauce nuc mam, salt water mixed into wine, etc.
